Tis the Season, To Eat - Recipe Inside

It's been a year of embracing both cooking and eating as a means of maintaining sanity, and we have actually loved the chance to make all those recipes saved and bookmarked over the years. There's been some disasters but also some straight-up triumphs, mostly involving chocolate - Nigella would be proud. 

We've also loved the chance to collaborate with the lovely duo behind Bare Health Studio, who along with their holistic knowledge of women's issues have kindly shared some incredible recipes with us this year (holla to that chocolate slice we'll be making forever) all packed with the nutrients we've needed to get through this slightly nuts year.

To sign off the year that was pretty much saved by snacking, we're sharing one last festive recipe from the girls. This one is from their Christmas ebook and with just a dash of red, it's holiday feasting all over.

Whole baked cauliflower

1 whole cauliflower 
Arils of ½ a pomegranate
2 large handfuls leafy greens 
2 tbsp flaked almonds 

Paste:
1 tbsp coconut oil, melted 
1 tsp cumin, ground
1 tsp ginger, ground
½ tsp cinnamon, ground
½ tsp coriander seeds, ground
½ tsp cayenne
½ tsp allspice, ground
1 tsp paprika 
½ tsp turmeric
¼ tsp cloves, ground
1 tsp salt
¾ tsp black pepper, freshly ground
1 tbsp harissa paste
2 tbsp maple syrup 

Lemon yoghurt sauce:
2 tbsp lemon juice
1 tbsp tahini
3 tbsp Greek yoghurt or coconut yoghurt
Pinch of salt and black pepper
¼ tsp maple (optional)

Preheat the oven to 200°C. In a small bowl, combine all paste ingredients and rub over cauliflower until completely covered. Place cauliflower on a lined baking dish and roast for 45-60 minutes (depending on the cauliflower’s size) or until a knife easily pierces the core. Once cooked. remove from heat and place on a serving dish lined with a bed of greens and topped with lemon yoghurt sauce, flaked almonds and pomegranate.

For the lemon yoghurt sauce, whisk all ingredients in a bowl until combined.
